Grilled Chicken Salad with Thai Basil Microgreens

Ingredients

  • 2 boneless, skinless chicken breasts

  • Salt and pepper to taste

  • 1 tbsp olive oil

  • 6 cups mixed salad greens

  • 1 cup cherry tomatoes, halved

  • 1 avocado, sliced

  • 1/2 red onion, thinly sliced

  • 1 cup Thai Basil microgreens

  • Your favorite vinaigrette dressing

Directions

  • Season the chicken breasts with salt and pepper.
  • Heat the olive oil in a grill pan over medium-high heat. Grill the chicken breasts until cooked through, about 6-7 minutes per side. Remove from heat and let rest before slicing.
  • Using a large salad bowl, combine the mixed salad greens, cherry tomatoes, avocado, and red onion.
  • Add the sliced grilled chicken on top of the salad.
  • Sprinkle generously with Thai Basil microgreens.
  • Drizzle with your favorite vinaigrette dressing and toss gently to combine. Serve immediately.
