This mimosa recipe replaces orange juice with grapefruit juice and adds a touch of rosemary with a rosemary simple syrup recipe. Champagne and grapefruit is a match made in heaven. It elevates the recipe to something elegant and tasty, letting you appreciate your sparkling wines in a new way.

This recipe is super easy! Simply create your rosemary simple syrup and mix all the ingredients together in your favorite champagne flute.

Helpful Tips

  1. Use a one-to-one ratio. No one wants a mimosa that tastes like fruit punch. On the other hand, they can just taste like sparkling wine — which isn’t much better. Use a one-to-one juice-to-champagne ratio to create your best cocktail.
  2. Create each cocktail in its glass. We know it’s convenient, but resist the urge to make mimosas in a punch bowl. It’s easier to gauge the ratio in a small glass, and you’ll end up with better mimosas for it! If you need to mass-produce, create your cocktail in various pitchers rather than a larger container.
  3. Use less expensive wine. At the end of the day, the mimosa is a cocktail. You don’t need to break the bank on the sparkling wine! Less expensive champagnes like Cava work just as well as anything. Save yourself a couple of dollars.
  4. Chill the glasses. This little touch will elevate your cocktails enormously. Put your glassware in the freezer right before you start creating your simple syrup.
  5. No pulp. We all love pulp, but when it comes to creating a cocktail, ditch it. Whether you’re using traditional orange juice or creating this grapefruit mimosa, you’re best off with a pulp-free (preferably homemade) juice.
  6. Use fresh rosemary. Believe it or not, fresh herbs will make all the difference — especially when creating the simple syrup. For best results, grow your own herbs. This way, they will be most flavorful. If you can’t, buy very very fresh at the grocery store.
  7. Make it pink. Use pink grapefruit juice to create a tart flavor and beautiful pink color you won’t be able to resist.

This delicious mimosa is created using tart grapefruit flavor, a bit of woodsy rosemary simple syrup, and champagne. Our favorite type is Prosecco.

Ingredients

  • For rosemary simply syrup:
  • 1 cup water

  • 1 cup sugar

  • 3 sprigs fresh rosemary

  • For cocktail:
  • 1 cup grapefruit juice, chilled

  • 1/4 cup rosemary simple syrup

  • 1 bottle champagne

  • 4 sprigs rosemary, for garnish

Directions

  • Make rosemary simple syrup.
  • Heat water and sugar in a small saucepan over medium heat until the sugar dissolves — about 5 minutes. Do NOT let the mixture boil.
  • Once sugar is dissolved, pour mix into a heat safe container and put rosemary sprigs in. Let steep for one hour.
  • Store simple syrup in fridge for up to 10 days.
  • Create your cocktail.
  • Add 1 Tbsp rosemary simple syrup and 1/2 cup grapefruit juice to each glass. Top off with champagne in a one-to-one ratio.
  • Garnish with rosemary and enjoy!

Notes

  • Use pink grapefruit juice to create a beautiful pink color.

Storage

Your rosemary simple syrup can store for up to 10 days in the refrigerator. Be sure to place it in an airtight container until used.

Do not try and store a complete cocktail. Your mimosas will taste best if you create them at the time of use!
