Garlic Potatoes with Fresh Herbs | Garden Inspired Recipe

The perfect roasted potato with an herb twist to serve as a side dish that will keep everyone asking for more!

Ingredients

  • 1 lb small to medium potatoes, all colors

  • 1 large shallot sliced

  • 4 fresh garlic cloves

  • 1 large sprig of fresh rosemary

  • 5-6 sprigs of fresh thyme

  • 2 dried bay leaves

  • 3 tablespoons extra virgin olive oil

  • 1 cup chicken stock

  • Salt and pepper to taste

Directions

  • Rinse potatoes and cook in a saute pan, add the shallot, garlic, rosemary, thyme and bay leaves. Add the olive oil and toss to coat evenly. Pour in the chicken stock and season with salt and pepper.
  • Cover the pan and bring to a simmer, reduce heat and cook for about 10 minutes.
  • Remove the lid and bring to high heat until the braising liquid has come to a boil. Continue to cook over high heat, shaking the pan until the liquid has evaporated and the potatoes sizzle.
  • Serve and enjoy
