Ingredients
5 cups arugula
4 medium carrots, shaved into ribbons
1/2 cup smoked salmon
⅓ cup Parmesan shavings
3 Tbsp chopped sunflower seeds
1 Tbsp chopped parsley
- For the dressing:
2 Tbsp freshly squeezed lemon juice
1 Tbsp balsamic vinegar
2 Tbsp extra-virgin olive oil
½ tsp salt
Directions
- In a small bowl, whisk together the dressing ingredients: lemon juice, balsamic vinegar, olive oil, and sea salt.
- Place arugula, carrots, and tomatoes in a large bowl. Toss with dressing.
- Sprinkle parmesan cheese, sunflower seeds, and parsley on top.
