  • 1 can black beans, drained and rinsed

  • 1 tsp cumin

  • 1 tsp chili powder

  • 8 corn tortillas

  • 1 cup corn kernels (fresh or frozen)

  • 1 cup diced red onion

  • 1 cup Radish microgreens

  • Hot sauce (optional)

Directions

  • In a saucepan, heat black beans with cumin and chili powder until warm.
  • Warm the corn tortillas in a skillet or microwave.
  • Spoon the seasoned black beans onto each tortilla, followed by corn kernels and diced red onion.
  • Sprinkle with Radish microgreens for a spicy, crunchy texture.
