Fresh Tomato Recipe with Basil, Blueberries & Balsamic

Ingredients

  • 1 cup of ripe cherry tomatoes
  • 1 cup fresh blueberries
  • 1 cup fresh basil, chopped
  • 3 tablespoons balsamic vinegar

  • Flaky sea salt, to taste
  • Fresh cracked black pepper (optional)
  • Goat cheese, fresh mozzarella, or burrata (optional)

Directions

  1. Slice the tomatoes and arrange them on a serving platter.
  2. In a mixer combine the blueberries, basil, balsamic vinegar, olive oil, sea salt, and pepper.
  3. Blend well.
  4. Spoon generously over the sliced tomatoes.
  5. Top with goat cheese, fresh mozzarella, or burrata if desired.

Serve with toasted sourdough or your favorite crusty bread.
