Vegan Tofu Quinoa Salad Recipe

This vegan tofu quinoa salad is meeting all our plant-based needs. Topped with a tahini dressing, this is a satisfying salad for any meal. Don’t be afraid of the tofu — when cooked well and paired with the right ingredients (as in this salad), it’s a delicious way to get your protein in!

INGREDIENTS

  • ½ block of firm tofu
  • 1 avocado
  • ½ tomato
  • ½ cup cooked quinoa
  • 1 zucchini
  • Tahini
  • Maple syrup
  • Nutritional yeast
  • Apple cider vinegar
  • Cayenne pepper
  • Salt, to taste

HOW-TO:

  1. Start by cooking the quinoa in a pot on the stove. As the quinoa cooks, dice the tofu and cook for 10 minutes in a saucepan over medium heat.
  2. In another pan, heat chopped tomato and zucchini and cook until soft. Once everything is cooked, add it to your plate along with fresh avocado.
  3. To make the sweet tahini sauce, mix 2 Tbsp of tahini with 1 tsp of maple syrup. Add a dash of apple cider vinegar and mix. Pour over the salad. Season with cayenne pepper, nutritional yeast, and salt.
  4. Enjoy!
