This vegan tofu quinoa salad is meeting all our plant-based needs. Topped with a tahini dressing, this is a satisfying salad for any meal. Don’t be afraid of the tofu — when cooked well and paired with the right ingredients (as in this salad), it’s a delicious way to get your protein in!
- ½ block of firm tofu
- 1 avocado
- ½ tomato
- ½ cup cooked quinoa
- 1 zucchini
- Maple syrup
- Nutritional yeast
- Apple cider vinegar
- Cayenne pepper
- Salt, to taste
- Start by cooking the quinoa in a pot on the stove. As the quinoa cooks, dice the tofu and cook for 10 minutes in a saucepan over medium heat.
- In another pan, heat chopped tomato and zucchini and cook until soft. Once everything is cooked, add it to your plate along with fresh avocado.
- To make the sweet tahini sauce, mix 2 Tbsp of tahini with 1 tsp of maple syrup. Add a dash of apple cider vinegar and mix. Pour over the salad. Season with cayenne pepper, nutritional yeast, and salt.
