Ingredients
½ cup sugar
2 cups chopped watermelon
2 limes sliced
1 cup of water
2 cups chilled soda water (we love Topo Chico)
1/3 cup fresh lime juice
1 bunch of freshly harvested mint sprigs
Ice
3 tsp finely grated lime rind
Directions
- Place sugar and water in a small saucepan over medium heat until sugar desolves, bring to a boil and add 3 tsp finely grated lime rind and 5 mint leaves. Set aside to cool.
- Place watermelon in a blender, and blend until smooth.
- Place lime slices in a large pitcher, add watermelon, soda water, lime juice, and cooled simple syrup. Combine.
- For extra flair, rim the glasses with sugar and lime rind.
