A summer mocktail that is perfect for people of all ages to enjoy.

Ingredients

  • ½ cup sugar

  • 2 cups chopped watermelon

  • 2 limes sliced

  • 1 cup of water

  • 2 cups chilled soda water (we love Topo Chico)

  • 1/3 cup fresh lime juice

  • 1 bunch of freshly harvested mint sprigs

  • Ice

  • 3 tsp finely grated lime rind

Directions

  • Place sugar and water in a small saucepan over medium heat until sugar desolves, bring to a boil and add 3 tsp finely grated lime rind and 5 mint leaves. Set aside to cool.
  • Place watermelon in a blender, and blend until smooth.
  • Place lime slices in a large pitcher, add watermelon, soda water, lime juice, and cooled simple syrup. Combine.
  • For extra flair, rim the glasses with sugar and lime rind.
