  • 1 tablespoon kosher salt

  • 2 tablespoons freshly ground black pepper

  • 2 cups chopped yellow onions

  • 6 garlic cloves minced

  • Spread the tomatoes in one layer on a baking sheet and roast for 45 minutes.

  • Pass through a food processor or blender.
  • Serve with grilled cheese and enjoy.

What to Serve With

There is no combination of flavors more delicious than the classic grilled cheese with tomato soup; you simply cannot beat it! When it comes to the grilled cheese, the world is your oyster. That is to say, you have an endless amount of options to choose from in terms of what you add to your grilled cheese. No matter what, it will remain delicious. Take a look at these recipes for inspiration.

This delicious soup is also great paired with a dish that has a little bit of spice. Consider pairing your soup with this fresh, spicy and tangy arugula salad. Bonus: arugula is the perfect hardy plant to add to your fall container garden. Plant your arugula now to harvest before winter hits.

When to Serve

The glory of a delicious soup recipe is that it’s perfect for both lunch and dinner. You can serve this soup as an appetizer before your entree at dinner, serve it as the main event with some fresh bread, or serve it up at lunch with a grilled cheese.

This soup is also wonderful on the go; if you’re sending your little ones off to school (or sending them to learn from home!) pack the soup in a Thermos for a wonderful and healthy addition to their lunch.
