Roasted Tomato & Basil Soup Recipe

The time has come for our fall tomato plants to gift us with a beautiful harvest. Put your fresh tomatoes to good use with this fantastic soup recipe – perfect for the cooler weather that is now upon us.

This recipe is a great way to put your final summer basil harvest to great use. Once you try this recipe for the first time, you will not want to stop making it! Savory, and just a touch sweet, this flavorful soup recipe will be on your mind all winter long. Ingredients

  • 3 pounds ripe plum tomatoes, cut in half

  • ¼ cup olive oil

  • 1 tablespoon kosher salt

  • 2 tablespoons freshly ground black pepper

  • 2 cups chopped yellow onions

  • 6 garlic cloves minced

  • ½ teaspoon crushed red pepper flakes

  • 28 ounces canned plum tomatoes or crushed tomatoes with their juice

  • 4 cups fresh basil leaves

  • 1 teaspoon fresh thyme leaves

  • 1 qt chicken stock or veggie stock

Directions

  • Preheat the oven to 400 degrees.
  • Toss the plum tomatoes, olive oil, salt and pepper together in a bowl.
  • Spread the tomatoes in one layer on a baking sheet and roast for 45 minutes.
  • In a stockpot on medium heat, sauté the onions and garlic in 2 tablespoons of olive oil and red pepper flakes for 10 minutes – until the onions start to brown.
  • Add the canned tomatoes, basil, thyme and chicken stock, then the oven roasted tomatoes, including the liquid on the baking sheet. Bring to a boil and simmer uncovered for 40 minutes.
  • Pass through a food processor or blender.
  • Serve with grilled cheese and enjoy.

This soup is also wonderful on the go; if you’re sending your little ones off to school (or sending them to learn from home!) pack the soup in a Thermos for a wonderful and healthy addition to their lunch.
