Roasted Ginger Carrots and Herbs Recipe

This is the perfect time of year to plant and grow carrots. They are a cool weather crop and so fun to harvest. Carrots are packed with beta-carotene, fiber, and numerous vitamins and minerals making them a great addition to any meal. Roasting carrots will bring out the sweetness of this classic vegetable and enhances their flavor giving them a wonderful, caramelized texture. They are perfect for serving as a side dish or adding to salads, tacos, or grain bowls. It is also a great way to get those essential nutrients from a fresh source.

Carrots are incredibly versatile and easy to incorporate into a variety of dishes. Here is one of our favorites- it is simple and delicious.

Ingredients

  • 10 to 12 Carrots

  • 2 teaspoons Honey

  • ¼ teaspoon Cumin

  • ¼ tablespoon Grated Ginger

  • Extra Virgin Olive Oil

  • Seasonal Herbs

  • Salt and Pepper to taste

Directions

  • Preheat oven to 425 degrees.
  • There is no need to peel the carrots, just clean them and pat dry.
  • Place the carrots on the parchment paper on a sheet plan and drizzle with honey, spices, olive oil and salt and pepper. Make sure they are all well coated.
  • Roast carrots for about 15-20 minutes. The carrots should be fork tender and browned.
  • Garnish with seasonal herbs and a drizzle of oil.
