Arugula Salad with Parsley and Lemon Vinaigrette | Recipe

This salad recipe is easily thrown together for a nutrient-packed meal or a side to your Italian pizza. With spicy arugula as its base, it’s heart-healthy and packed with flavor.

Mix with carrots and tomatoes, then top with parsley, sunflower seeds, and parmesan — or skip the cheese if you’re being calorie-conscious. Then, a lemony vinaigrette adds just the right tang to cut through the arugula.

Heart-healthy arugula makes up the base of this salad. Mixed with carrots, tomatoes, parmesan, parsley, and lemon vinaigrette, this salad is a zippy tangy recipe.

Ingredients

  • 5 cups arugula

  • 4 medium carrots, shaved into ribbons

  • 1/2 cup smoked salmon

  • ⅓ cup Parmesan shavings

  • 3 Tbsp chopped sunflower seeds

  • 1 Tbsp chopped parsley

  • For the dressing:
  • 2 Tbsp freshly squeezed lemon juice

  • 1 Tbsp balsamic vinegar

  • 2 Tbsp extra-virgin olive oil

  • ½ tsp salt

Directions

  • In a small bowl, whisk together the dressing ingredients: lemon juice, balsamic vinegar, olive oil, and sea salt.
  • Place arugula, carrots, and tomatoes in a large bowl. Toss with dressing.
  • Sprinkle parmesan cheese, sunflower seeds, and parsley on top.
  • Drizzle extra dressing as desired and serve immediately!
