Strawberry Spinach Salad with Broccoli Microgreens

Ingredients

  • 6 cups fresh spinach leaves

  • 1 cup strawberries, sliced

  • 1/2 cup blueberries

  • 1/4 cup red onion, thinly sliced

  • 1/4 cup broccoli microgreens

  • 1/4 cup chopped pecans, toasted

  • 1/4 cup crumbled blue cheese

  • Balsamic Vinaigrette
  • 1/4 cup balsamic vinegar

  • 2 tbsp olive oil

  • 1 tbsp honey

  • 1 tsp Dijon mustard

  • Salt and pepper to taste

Directions

  • In a large salad bowl, combine the fresh spinach leaves, sliced strawberries, blueberries, and red onion.
  • In a small bowl, whisk together the ingredients for the balsamic vinaigrette until well combined.
  • Drizzle the vinaigrette over the salad and toss gently to coat.
  • Top with broccoli microgreens, toasted pecans, and crumbled blue cheese.
  • Serve immediately and enjoy the sweet and tangy flavors.
