Roasted Tomato Salsa

minutesThis Roasted Tomato Salsa is a crowd favorite. We make it for events and gatherings and have gotten incredible feedback!
Ingredients
2 tablespoons olive oil
2 Jalapenos or serrano chilies
½ cup of red onion, chopped
1 tablespoon chopped garlic
6 tomatoes cut in half and seeded. Our favorite is the plum tomatoes.
Salt and pepper to taste
2 limes, juiced
¼ cup chopped fresh cilantro
Directions
- Heat the grill to high
- Heat olive oil in a sauté pan and sauté the chilies, onion and garlic until soft.
- Brush tomatoes with oil and season with salt and pepper.
- Grill on both sides of the tomatoes until soft and charred.
- Place the tomatoes and serrano mixture to a food processor; add the lime juice and salt and pepper. Process until smooth.
- Add the cilantro.
- Serve
