Queso Dip Recipe

Enjoy this white queso dip recipe by the cookie rookie

Ingredients

  • 1 Small Onion
    2 Cloves diced Garlic
    1-2 Jalapeno- freshly harvested is always best
    2 Cups Reduced fat sharp cheddar cheese
    3 Tbsp Reduced fat cream cheese
    1 Cup Almond milk
    3 Tbsp Cornstarch
    1 Diced Large Tomato
    1 Canned green chilis
    1/2 Tsp Cumin
    1 Tsp Chili powder
    Salt and Pepper To Taste
    Fresh chives for garnish

Directions

  • In a small saucepan, sate onion, garlic, and jalapenos until soft, about 5 minutes.
  • In a separate bowl, whisk together almond milk and cornstarch. When the veggies are tender, add milk and cornstarch mixture to saucepan. Increase heat to medium until the mixture begins to boil.
  • Reduce heat and whisk in cumin and chili powder. Add in canned chilis and tomato with all of their juices. Simmer until sauce is thick, about 4-5 minutes.
  • Add cream cheese stir until it is fully melted. Remove from heat and fold in cheddar cheese 1/4 cup at a time. Add salt and pepper to taste, garnish with chives and serve hot.
