This Mint Salsa Verde is a refreshing and flavorful condiment that brings a delightful twist to traditional salsa verde!

Ingredients

  • 2 bunches of fresh parsley

  • 1 bunch of fresh mint

  • 2 tbsp salted capers

  • 3 garlic cloves

  • 1 tbsp Dijon mustard

  • 1 tbsp red wine vinegar

  • 2/3 cup extra virgin olive oil

Directions

  • Coarsely chop the fresh parsley and mint. Place in a food processor.
  • Drain the capers and add to the food processor.
  • Add garlic, mustard, vinegar, and olive oil, and process until combined and smooth. Season with salt and pepper.
  • Serve with chicken, steak, eggs, fish, grilled vegetables, and lamb.
