Homemade Mexican Pizza with a Fresh Twist [Taco Bell Copy Cat Recipe]

Hispanic Heritage Month is observed from September 15th to October 15th. It serves as a time to honor and recognize the rich cultural tapestry, historical significance, and enduring contributions of Hispanic and Latino communities. This annual celebration encourages an opportunity to delve into the vibrant traditions, stories, and accomplishments of these diverse and influential groups.

Hispanic Heritage Month holds great significance as it encompasses the anniversaries of independence for several Latin American countries, including Costa Rica, El Salvador, Guatemala, Honduras, and Nicaragua, which all gained their independence on September 15th, 1821. Additionally, Mexico celebrates its independence on September 16th, and Chile on September 18th. These milestones highlight the importance of recognizing and celebrating the diverse histories and cultures that have shaped the Hispanic and Latino communities.

The term “Hispanic” encompasses a wide array of cultures, languages, and backgrounds. From the mariachi melodies of Mexico to the rhythmic salsa beats of Puerto Rico and the mouthwatering flavors of Cuban cuisine to the colorful folklore of Colombia, Hispanic Heritage Month offers a unique opportunity to explore and appreciate the diverse traditions that make up these communities.

One of the most enchanting aspects of Hispanic cultures is their strong emphasis on family and community. Traditional celebrations often revolve around shared meals, lively dances, and heartfelt gatherings, creating a sense of unity and togetherness that is truly heartwarming.

No celebration of Hispanic Heritage Month would be complete without indulging in the mouthwatering flavors and aromas of Hispanic cuisine. Food plays a central role in any culture, and the diverse culinary traditions of Hispanic and Latino communities offer a delectable glimpse into their rich heritage. From savory to sweet, from street food to family feasts, the iconic dishes that define this vibrant culture are one to celebrate.

In honor of Hispanic Heritage Month, we are celebrating in a way to bring you and your loved ones around your table and enjoy a fresh take on delicious, vibrant, and a little spicy Mexican Pizza. This is an ode to all of the Taco Bell groupies, Mexican heritage, and family celebrations. Enjoy!

Taco Bell Mexican Pizza Copycat by Mason Woodruff

Ingredients

  • 1 lb Ground Beef (96/4)

  • 15 oz can Fat-Free Refried Beans

  • 8 oz Chicken Broth, Beef Broth, or Water

  • 1 package Reduced Sodium Taco Seasoning

  • 16 Baked Tostadas

  • 1/2 cup Taco or Enchilada Sauce

  • 4 oz Shredded Mexican Cheese

  • Pico de Gallo, for serving

Directions

  • Preheat an oven to 400ºF and place 8 tostadas on a large baking sheet (or two baking sheets). Set aside.
  • Brown the ground beef in a large skillet over medium-high heat. Once cooked, add the taco seasoning, refried beans, and broth. Continue cooking until everything is evenly mixed, and no excess liquid remains, about 3-4 minutes.
  • Top the 8 tostadas with the beef mixture, about 4-5 ounces each. Place the remaining 8 tostadas on top of the beef, sealing the pizzas.
  • Add 1 tablespoon of taco sauce to each pizza, spreading it to the edges to fully coat the top. Sprinkle 1/2 an ounce of shredded cheese on top of the sauce.
  • Bake for 8-10 minutes or until the cheese is fully melted.
  • Top with pico de gallo or diced tomatoes, slice into quarters, and serve!
