Herb Microgreen Omelette

Ingredients

  • 4 large eggs

  • 1/4 cup milk

  • Salt and pepper to taste

  • 1 tbsp butter

  • 1/2 cup shredded cheese (cheddar, mozzarella, or your choice)

  • 1/4 cup Superfood microgreens

  • 1/4 cup Genevese Basil microgreens

Directions

  • In a bowl, whisk together the eggs, milk, salt, and pepper until well combined.
  • Heat the butter in a non-stick skillet over medium heat until melted and bubbly.
  • Pour the egg mixture into the skillet, tilting to spread it evenly. Cook until the edges start to set.
  • Sprinkle the shredded cheese, Superfood microgreens, and basil microgreens evenly over one-half of the omelet.
  • Fold the omelets in half over the filling and continue to cook until the cheese is melted and the eggs are fully cooked.
  • Slide the omelets onto a plate and garnish with additional herb microgreens if desired. Serve immediately.
