Grilled Chicken Salad with Thai Basil Microgreens

2 boneless, skinless chicken breasts
Salt and pepper to taste
1 tbsp olive oil
6 cups mixed salad greens
1 cup cherry tomatoes, halved
1 avocado, sliced
1/2 red onion, thinly sliced
1 cup Thai Basil microgreens
Your favorite vinaigrette dressing
Directions
- Season the chicken breasts with salt and pepper.
- Heat the olive oil in a grill pan over medium-high heat. Grill the chicken breasts until cooked through, about 6-7 minutes per side. Remove from heat and let rest before slicing.
- Using a large salad bowl, combine the mixed salad greens, cherry tomatoes, avocado, and red onion.
- Add the sliced grilled chicken on top of the salad.
- Sprinkle generously with Thai Basil microgreens.
- Drizzle with your favorite vinaigrette dressing and toss gently to combine. Serve immediately.
