Golden beets or yellow beets, the (undersung, if you ask us) cousin of regular beets, have identical nutrition to their counterpart but are slightly sweeter and a bit more mild. We treat them exactly as you would a regular beet here, roasted slowly until fork-tender and delicious.

Spin your seasonings. This recipe leans into the earthiness of the beets–and their health benefits–with anti-inflammatory spices such as turmeric and ginger. If you prefer something a little milder, switch them out for simple salt and pepper.
Slow roasting is key. No one wants a bit of raw beet in an otherwise perfect salad. Aim to roast your beets for at least an hour before checking for doneness. You are unlikely to overcook them.
Keep moving. An hour of roasting can seem daunting for a weeknight meal, but if you take advantage of the oven time, you’ll be shocked at how fast everything comes together. Prepare your farrow, chop your radicchio and make your dressing in the final 30 minutes in the oven for a perfectly-timed finish.
Add protein as needed. We opted to not include meat in the recipe, instead relying on nuts and feta (it’s packed with the nutrient) for protein. If you want to add meat or tofu, go crazy!
Get creative. Even beyond spices and protein, there are lots of ways to make this dish your own. Try adding additional roasted vegetables, swap goat cheese for feta, or experiment with other ancient grains such as bulgar, couscous, or quinoa as opposed to farrow.

Healthy, crunchy, and tasty – this golden beet salad recipe with radicchio is a great healthy dish that everyone will love!
4-5 golden beets, tops removed
4 tablespoons olive oil, divided
½ teaspoon turmeric
½ teaspoon ginger
½ teaspoon salt
2 teaspoon honey, divided
Juice of one lemon
1 cup farrow, uncooked
1 head radicchio, cut into ribbons
½ cup feta cheese, thinly sliced or crumbled
½ cup pistachios, chopped
¼ cup dried cranberries (optional)
- Prepare the beets. Preheat the oven to 400 degrees. In a small bowl, combine two tablespoons olive oil, all spices and 1 teaspoon of honey and mix until well combined. Rub beets with the spice blend, then wrap each one in its own aluminium foil pod. Roast for 40-90 minutes, until very tender. Set aside to cool, then peel the skin off with your hands. Just before adding to the salad, cut each beet into 1 ½ inch pieces.
- Make the dressing. Add the remaining 2 tablespoons of olive oil, 1 teaspoon of honey and lemon juice to a medium size bowl. Add pinch of salt and stir until homogenous.
- For the salad: Cook farrow according to package instructions. To a large salad bowl, add cooked beets, cooked farrow, radicchio, feta and pistachios. Top with dressing, and toss until well combined. Serve immediately.
