Cucumber Mojito Recipe

Cucumber is the cocktail ingredient of the summer. We’ve already seen it show up in margaritas and G&Ts, but this new recipe might be our favorite yet.

This flavor-forward cucumber drink celebrates the cool, crisp veggie with the classic summer fun that only a mojito can bring. It’s the perfect beverage for long summer dinners al fresco and lazy days by the pool–especially when made with fresh mint straight from your backyard garden. 

Helpful Hints

Use real limes. As tempting as it is to reach for pre-squeezed lime juice, this recipe really benefits from the genuine article. You’ll also save a couple of dollars by purchasing the whole fruit, a win-win.

Adjust the sweetness to taste. We have ½ ounce of simple syrup in here, but you can add or subtract according to your personal taste. You can also use regular, whole sugar if you don’t have simple syrup on hand.

Muddle, muddle, muddle. Really get in there with the muddler. The more combined your flavors, the more balanced your drink will be.

Get creative. The easiest way to make this drink your own is to adjust the amounts to your liking. However, if you really want to add your own spin, try adding in demerara sugar, grapefruit-flavored seltzer or rimming the glass with spicy tajin for a sweet-and-salty situation.

A classic, cool, cucumber Mojito. Enjoy!

Ingredients

  • 1 lime, quartered

  • 2-3 sprigs of fresh mint leaves

  • .5 oz simple syrup

  • 2 slices cucumber

  • Ice

  • 2 oz white rum

  • Club soda

Directions

  • In the bottom of a highball glass, squeeze lime quarters, then drop in the lime rinds. Add mint leaves and simple syrup, then muddle everything together until crushed and juicy.
  • Add cucumber slices and ice, pour in the rum, then top everything with club soda. Give the drink a good stir, and enjoy immediately.
