Looking to get more fresh herbs in your diet? It’s easy to think about throwing some basil into your salad mix or mint into your water—but what do you do for the most important meal of the day? Incorporating herbs into your diet is important for your health because many of them can help lower cholesterol and prevent against high blood pressure.

Herbs and breakfast go together like eggs and bacon. You just have to get a little bit creative in the kitchen. Here are some of our favorite ways to get more herbs right as you start off your day.

Eggs

Eggs are one of the many breakfast foods that you can add herbs to for a more tasty and healthy breakfast meal. Making scrambled eggs with parsley infused oil is a great start. Another way to liven up your eggs is the Potato Basil Frittata recipe with the extraordinary Ina Garten.

Potatoes

There are many herbs that can be added to all types of potatoes to enhance the flavor and add some health benefits to your diet. Try adding fresh parsley and sage to your next batch of hashbrowns. Or make home fries and season them with thyme, parsley, summer savory, rosemary and chives! Scalloped potatoes are also taste great with fresh thyme, rosemary, sage, and even some minced shallots. Many of these herbs can help boost immune systems, moods, lower blood pressure, and even fight acne.

Another way to liven up your potatoes is with fresh Thyme, The Spruce Eats has a great Roasted New Potatoes With Thyme and Garlic Recipe.

Breads

Herbs can help make popular bread recipes either savory or sweet depending on what you choose to use. Cheddar thyme biscuits are a delicious side to go with potatoes and eggs. Or make some homemade sweet rolls with cinnamon and nutmeg. Add cilantro to your favorite avocado toast recipe! Or get fancy in the kitchen and you can even make sage biscuits or basil scones to go with a more elegant breakfast. Cinnamon is loaded with antioxidants and has anti-inflammatory properties, while basil can help with blood pressure and cholesterol levels.

Crepes

Crepes are one of those rare breakfast foods that have a wide variety of both sweet and savory options. Cinnamon and nutmeg are popular to add to a lot of sweet ones. Or try making a savory crepe while adding herbs such as chives, tarragon, dill, parsley, or chervil. Chives can help improve memory function and are high in vitamin K which is important for bone health and blood clotting.

Epicurious has a great recipe for Basil Crepes, sounds challenging but we promise it is not.
