Bacon Lettuce Tomato Salad Recipe | BLT Salad

A fresh take on the BLT – the BLT Salad.

Bringing together freshly harvested tomatoes with some leafy greens a little crispy bacon and you have the perfect salad.

Slice the tomatoes and sprinkle with a little salt and you will be amazed at the flavor.  The salt concentrates the tomato flavor and will loosen up the tomato juices that become part of the dressing. 

This salad is the perfect main course and when served with a loaf of fresh warm bread you will have everyone clamoring for seconds.

Bacon, Lettuce, and Tomato Salad… What more could you want?

Ingredients

  • 2 cups of halved cherry tomatoes

  • ¼ cup mayonnaise

  • 2 tablespoons fresh lemon juice

  • 3 teaspoons chopped fresh dill or basil

  • 2 cups of fresh arugula or your favorite leafy greens

  • ½ cup of chopped crispy bacon

  • Salt

  • Pepper

Directions

  • Combine tomatoes and salt in a large bowl. Let stand for at least 5 minutes.
  • Combine mayonnaise, juice, dill or basil and pepper in a bowl, stirring with a whisk.
  • Add the leafy greens to the tomatoes, toss with the mayo mixture and sprinkle with bacon.
