This is one of my summertime favorites as it can be made ahead of time, does not heat up the kitchen, and is full of fresh ingredients.
If I have oregano growing in my garden at the time, I will chop a handful and place it in my salad too.
While you’re making careful to not over-salt the dressing. Feta cheese is salty and will add to the flavor of the salad.
Cucumber, Tomato, and Feta Salad

Ingredients
4 cups Coarsely Chopped Cucumbers (I like peeled)
2 Large Tomatoes
1 Bunch of Green Onions Chopped
1 cup of Pitted Kalamata Olives, Halved
½ cup Coarsely Chopped Fresh Mint
6 Tbsp Olive Oil
¼ Fresh Squeezed Lemon Juice
Directions
- Combine cucumber, green onions, tomatoes, olives, mint and ½ of cheese in bowl.
- In a separate smaller bowl, whisk together lemon juice and oil until combined. Season lemon mixture with salt and pepper.
- Pour dressing over salad and sprinkle remaining feta cheese over salad.
- Chill until ready to serve.
