Tabbouleh is a Levantine dish that we’ve happily adopted into western culture, and for good reason—it’s absolutely delicious.

We suggest you eat it in place of a side salad. It’s healthy, packed with exciting and fresh flavor.

Try this tabbouleh recipe instead of your normal side salad.

Ingredients

  • 2 cups of water

  • 1 cup quinoa

  • ¼ cup olive oil

  • ½ tsp sea salt

  • ¼ cup lemon juice

  • 3 tomatoes, diced

  • 1 cucumber, diced

  • 2 bunches green onions, diced

  • 2 carrots, grated

  • 1 cup fresh parsley, chopped

Directions

  • In a saucepan, bring water to a boil.
  • Add quinoa and a pinch of salt.
  • Reduce heat to low, cover, and let simmer for about 15 minutes or until cooked.
  • Allow quinoa to cool to room temperature and fluff with a fork.
  • Combine olive oil, sea salt, lemon juice, tomatoes, cucumber, green onions, carrots and parsley in a large bowl.
  • Stir in cooled quinoa.
  • Season to taste!
