There’s nothing that puts you in a good mood like a summer herb picked fresh from a backyard garden. It’s why this sunny herb salad is able to bring a smile to any face. 

We substitute a quarter of the greens you’d find in a regular salad with whole fresh herbs, creating a backdrop that’s filling, flavorful, and anything but boring. Served with a creamy, garlicky dressing and sprinkled with crunchy radishes, you’ll find yourself turning to this go-to again and again. 

Helpful Hints

Fresh is best. Use herbs and greens harvested from your own backyard. Trust us, it’s worth it!

Thinly sliced means thinly sliced. Radishes can be polarizing, since they are often thought to have an unpleasant earthy flavor. In reality, they’re just not being sliced thin enough. You should be able to see through your radish slice in this recipe. If you aren’t so steady with a knife, try using a mandolin. 

Go dairy-free. We love greek yogurt, but if you are avoiding dairy, it’s no issue. Substitute mayo (really, it’s dairy-free!) or vegan yogurt for the lactose-free crowd.

Get creative. We love a riff! Swap out our suggested herbs for dill, mint, or cilantro, throw in some tomatoes or avocado or get crazy on adding spices like paprika and cumin in your dressing. This is one recipe you can really make your own.

An easy to make tasty salad that uses fresh herbs for extra flavor and freshness!

Ingredients

  • 3 cups loosely-packed greens of choice

  • ⅓ cup  fresh basil leaves

  • ⅓ cup fresh parsley leaves

  • ⅓ cup fresh tarragon leaves

  • ½ cup thin-sliced radishes

  • The Dressing
  • 1 cup non-fat greek yogurt

  • 1 Tbsp. lemon juice

  • 2 Tbsp. chopped fresh chives

  • 1 clove garlic, grated

  • Salt and pepper, to taste

Directions

  • Combine all vegetables and herbs together in a large salad bowl. Store in the refrigerator until right before serving. 
  • Make the dressing: Add all ingredients to a food processor or blender and mix under well combined. Thin with water until desired consistency is achieved. 
  • Pour the dressing over the salad greens and toss to combine. Serve immediately.
