Strawberry and Mint Popsicle Recipe

This Strawberry and Mint Popsicle Recipe is super simple to make and a wonderful way to enjoy all of your fresh mint that is growing in your garden.  With the weather warm and dayslong the Pick it Please is a refreshing treat and appeals to every age.

The fresh aromatic flavor of the mint combined with the ripe strawberries makes this a taste sensation.  It’s sweet, slightly tangy, yet cool and refreshing at the same time.  Sounds just like summer.

Strawberries are one of summer’s favorite fruits. They are in season and can be found at almost every farmer’s market and grocery store. (But nothing is better than harvesting your own fresh strawberries!)Strawberries are that one fruit everybody loves and when you serve them frozen on a stick with a hint of mint – it makes every gathering special.

Any popsicle mold will work for this recipe however, we love the slightly bigger molds which allows us to have a few big pieces of strawberry in each popsicle.   Another trick for making this super easy popsicle is to fill the molds a quarter of the way, freeze them partially, and then add the rest of the fruit mixture on top of the frozen part.  If you are looking to add a creamy layer of love to these homemade popsicles simply fill the mold halfway with the strawberry mixture then layer in a nice cream base, freeze and then pour the remaining strawberry mixture on the top.  This may take a little longer, but so fun to try.

Regardless of the type of mold you use, the basic popsicle process is the same. When your popsicle mix is ready pour it into the molds, leaving about one-quarter inch of room at the top since the popsicles will expand when they freeze. Make sure to wipe any excess mixture from the sides and top of the mold because that can make unmolding challenging.

Ingredients

  • 2 cups of water

  • 1 cup of Mint Simple Syrup*

  • 1 cup of Sugar

  • 1 sprig of fresh Mint

  • 4-5 mint leaves, sliced

  • 1/4 cup of lemon juice

  • 1 cup of sliced strawberries

Directions

  • Mint Simple Syrup:
  • Make the Mint Simple Syrup. Bring 1 cup of water, equal parts sugar and 1 sprig of fresh mint leaves to a boil. Remove from heat and let steep for 10-15 minutes. Then add the lemon juice, 1 cup of water, stir and let cool.
  • Strawberry Mint Popsicles:
  • Add sliced strawberries and thinly sliced mint to popsicle molds.
  • Pour the cooled syrup through mesh sieve removing the mint sprig and pour the liquid into the popsicle molds.
  • Freeze
