Grilled salsa is one of our favorite ways to liven up fish, chicken or veggie tacos.  It is also a great side dish and if you have any leftover, try topping your omelet with this fresh recipe.

This Roasted Tomato Salsa is a crowd favorite. We make it for events and gatherings and have gotten incredible feedback!

Ingredients

  • 2 tablespoons olive oil

  • 2 Jalapenos or serrano chilies

  • ½ cup of red onion, chopped

  • 1 tablespoon chopped garlic

  • 6 tomatoes cut in half and seeded.  Our favorite is the plum tomatoes.

  • Salt and pepper to taste

  • 2 limes, juiced

  • ¼ cup chopped fresh cilantro

Directions

  • Heat the grill to high
  • Heat olive oil in a sauté pan and sauté the chilies, onion and garlic until soft.
  • Brush tomatoes with oil and season with salt and pepper.
  • Grill on both sides of the tomatoes until soft and charred.
  • Place the tomatoes and serrano mixture to a food processor; add the lime juice and salt and pepper. Process until smooth.
  • Add the cilantro.
  • Serve
