Roasted Ginger Carrots and Herbs Recipe

Ingredients
10 to 12 Carrots
2 teaspoons Honey
¼ teaspoon Cumin
¼ tablespoon Grated Ginger
Extra Virgin Olive Oil
Seasonal Herbs
Salt and Pepper to taste
Directions
- Preheat oven to 425 degrees.
- There is no need to peel the carrots, just clean them and pat dry.
- Place the carrots on the parchment paper on a sheet plan and drizzle with honey, spices, olive oil and salt and pepper. Make sure they are all well coated.
- Roast carrots for about 15-20 minutes. The carrots should be fork tender and browned.
- Garnish with seasonal herbs and a drizzle of oil.
