Some popsicles with liquor seem challenging to make, but this recipe is actually incredibly easy and so worth the effort. The hardest part is waiting for the 6 plus hours for the treat to freeze.

Once you have combined all of the ingredients and taste-tested along the way it is time to pour the liquid into your molds. We really like using silicone molds for lots of reasons. They are really easy to clean and it is super easy to remove the popsicles from the mold when you are ready to serve.
However, if you don’t have molds handy and you are ready to get going with this tasty treat you can use small disposable Dixie cups. Once the mixture is frozen, tear away the cup and enjoy your pop. One thing to remember if you are using cups or ice cube trays is to let the pop freeze for about an hour and then put your popsicle stick in. You can secure the stick using foil if need be.

1 sliced jalapeno
½ cup blanco tequila
4 cups fresh pineapple
½ cup lime juice
¼ cup jalapeno simple syrup
Pinch of cayenne pepper
6 tablespoons jalapeno tequila
- Jalapeno infused Tequila
- Combine sliced jalapeno and tequila, cover and allow to infuse for at least 4 hours before using.
- Jalapeno Simple Syrup:
- Bring 1 cup of sugar and 1 cup of water to a boil, add 2-3 slices of jalapeno and remove from heat. Let this steep for 30 minutes to an hour.
- Making the Popsicles:
- In a blender, blend pineapple, lime juice and simple syrup on high until smooth.
- Stir in jalapeno tequila.
- Pour into popsicle mold and freeze overnight.
