Lemon Basil Herb Microgreen Pasta

Ingredients

  • 12 oz pasta (your choice)

  • 1/4 cup olive oil

  • 2 cloves garlic, minced

  • 1 lemon (zested and juiced)

  • 1/2 cup grated Parmesan cheese

  • 1 cup mixed basil microgreens 

  • Salt and pepper to taste

Directions

  • Cook the pasta according to package instructions until al dente. Drain and set aside.
  • In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté until fragrant, about 1-2 minutes.
  • Add the cooked pasta to the skillet, tossing to coat with the garlic oil.
  • Stir in the lemon zest, lemon juice, and grated Parmesan cheese.
  • Remove from heat and gently fold in the mixed herb microgreens.
  • Season with salt and pepper to taste. Serve immediately, garnished with additional herb microgreens and Parmesan if desired.
