Lemon Basil Herb Microgreen Pasta

12 oz pasta (your choice)
1/4 cup olive oil
2 cloves garlic, minced
1 lemon (zested and juiced)
1/2 cup grated Parmesan cheese
1 cup mixed basil microgreens
Salt and pepper to taste
Directions
- Cook the pasta according to package instructions until al dente. Drain and set aside.
- In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté until fragrant, about 1-2 minutes.
- Add the cooked pasta to the skillet, tossing to coat with the garlic oil.
- Stir in the lemon zest, lemon juice, and grated Parmesan cheese.
- Remove from heat and gently fold in the mixed herb microgreens.
- Season with salt and pepper to taste. Serve immediately, garnished with additional herb microgreens and Parmesan if desired.
