The Lucy- Lavender & Lemonade Popsicle Recipe

Warm weather is perfect for frozen treats and The Lucy, lavender, and lemonade popsicle won’t disappoint.  The flavor combination of fresh lavender, honey, and lemonade will quickly become the favorite freezer treat for both kids and adults. It is so fun to harvest your own fresh lavender to use and taking the extra time to turn the ultimate drink of summer into a frozen treat is so worth it.

No summer is ever complete without a popsicle and while the cherry popsicle is still the number one selling popsicle in America, this inventive and easy recipe will long be remembered and requested after summer.  The Lucy is crazy simple to make especially if you are using store-bought lemonade.

You may be wondering, with so many popsicles at the store, ready to eat why not just buy them. But your homemade popsicles allow you to get creative and bring your very favorite flavors together.  This is the picture-perfect time to let your kids help you in the kitchen.

Once you mix up all of the ingredients you are ready to mold your popsicles.  We are partial to the silicone popsicle molds; they are easy to clean, and the popsicles are easy to remove. 

If you don’t have a mold handy but you are ready to get going you can also pour the mixture into ice cube trays or small paper cups. Just remember to place your popsicle sticks into the freezing mixture about an hour after you have placed them in the freezer.

The Lucy is one of those seasonal treats you will want to have on hand and at the ready.

Being inventive with fresh ingredients is the key to making your own homemade popsicles.  For inspiration, look in your garden.

Lucy Lavender & Lemonade Popsicle

This popsicle recipe is a great way to beat the heat – not too mention they taste great! Who doesn’t love lemonade?

Ingredients

  • 1 handful of Fresh Lavender

  • 1 cup Sugar

  • 1 cup Water

  • 4 tbsp Honey

  • 2 cups Lemonade

Directions

  • Lavender Simple Syrup:
  • First make the Lavender Simple Syrup by bringing 1 cup of sugar and 1 cup of water to a boil and let steep for 10-15 minutes.
  • Making the Popsicles:
  • Let the Lavender simple syrup cool and then strain out the herbs with a mesh sieve and stir in the honey.
  • Mix the lemonade with the simple syrup and honey.
  • Pour into popsicle molds and freeze.
