For those of us who have wanted to lather the sauce on just about anything, this recipe is a triumph. Just about as close as you can get to the real thing, your homemade fajitas, tacos, and burritos ascend to the next level with just a dab. And if you use fresh herbs from your Gardenuity Taco Toppings Garden, it might just taste even better than the original.
Ingredients matter. The best sauce will be made with the best ingredients. Aside from using fresh, homegrown herbs, be sure to squeeze your own limes and mince your own garlic instead of using the prepackaged variety. Fun hack: grating your garlic on a microplane greatly reduces the prep time.
Give the herbs a good chop. You’ll want to make sure that your herbs are well-chopped before they go into the blender. Although this seems counterintuitive, there is a purpose: the plants will start releasing more flavor as soon as they touch the knife. Giving them a pre-cut ensures that all that goodness ends up in the finished product.
Don’t fear the mayo. Mayonnaise can be a daunting food for many of us. There is a lot in here, but, remember, you aren’t using the full quantity every time you take a spoonful. If you can’t get over it, try using vegan mayonnaise, low-fat sour cream, or fat-free greek yogurt.
Get creative. While the classic recipe is pretty perfect as-is, that doesn’t mean you can’t make it your own. Try experimenting with different kinds of salt, hot sauce, or even different bases aside from mayonnaise. For those of us who hate cilantro, sub out for basil or mint.
