4 English muffins, split and toasted
8 slices of Canadian bacon
4 poached eggs
1 cup Curly Kale microgreens
Hollandaise sauce (store-bought or homemade)
Chopped chives (optional)
Directions
- Cook the Canadian bacon in a skillet over medium heat until browned.
- Place a slice of Canadian bacon on each toasted English muffin half.
- Top with a poached egg.
- Spoon hollandaise sauce over each egg and sprinkle with chopped chives if desired.
