Breakfast Tacos With Spicy Salad Microgreens

Ingredients

  • 4 large eggs

  • 1/4 cup milk

  • Salt and pepper to taste

  • 1 tbsp butter

  • 8 small corn tortillas

  • 1/2 cup shredded cheese (cheddar or your choice)

  • 1 cup diced tomatoes

  • 1 cup Spicy Salad microgreens

  • Salsa (optional)

Directions

  • In a bowl, whisk together the eggs, milk, salt, and pepper.
  • Melt the butter in a skillet over medium heat. Add the egg mixture and cook, stirring gently, until scrambled and fully cooked.
  • Warm the tortillas in a skillet or microwave.
  • Divide the scrambled eggs among the tortillas, then sprinkle with shredded cheese and diced tomatoes.
  • Sprinkle with a handful of fresh Spicy Salad microgreens for a light, spicy flavor.
  • Add salsa if desired.
