A thick slice of juicy, flavorful beefsteak tomato is the hamburger replacement that you didn’t know you were missing. Add some plant-based herbed aioli, and you’re in for the best vegan cookout you’ve ever had.

Get the best tomato you can get. The tomato is the star of this dish. Get a real, large, juicy beefsteak tomato for the best results.

Don’t skimp on the bun. As much as we love a lettuce-wrapped burger, this isn’t the time. A vegan burger bun really ties everything together in this dish. 

Feel free to cut corners on the aioli. Sometimes, it’s worth it to break out the food processor and make everything from scratch. This is not one of those situations. Get the premade vegan mayo, and keep the cookout moving.

Beefsteak Tomato Burger with Herbed Aioli

Ingredients

  • 1 very large Beefsteak tomato

  • 1 cup vegan mayo

  • 2 Tbsp fresh minced chives

  • 2 Tbsp fresh minced basil

  • 2 Tbsp fresh minced parsley

  • Salt & pepper to taste

  • 1 vegan burger bun

Directions

  • Cut your Beefsteak tomato into ½ inch, flat slices. Pat gently with a paper towel to dry.
  • In a large bowl, combine vegan mayo, herbs, salt, and pepper. Season to taste. 
  • To assemble, place your tomato slice onto the bottom of the burger bun. Gently salt the top of the tomato before topping with the top bun, spread with the vegan aioli.
