Classic Caprese Salad with Tomato, Mozzarella, Basil, Olive Oil and Balsamic Vinegar Glaze

In this blog, we have gathered three of our favorite tomato recipes that let the sweet, tangy flavor of summer’s favorite fruit shine.

1. Fresh Tomato Caprese Salad

This classic Italian dish is simple, fresh, and bursting with flavor. The combination of ripe tomatoes, creamy mozzarella, fresh basil, and a drizzle of balsamic glaze makes for a perfect appetizer or side dish. Not only does this tomato salad provide a burst of flavor, but it also delivers powerful antioxidants and vitamins.

Ingredients:

  • 4-5 ripe tomatoes, sliced
  • 8 oz fresh mozzarella, sliced
  • A handful of fresh basil leaves
  • 2 tbsp extra virgin olive oil
  • 1 tbsp balsamic vinegar (or balsamic glaze)
  • Salt and pepper to taste

Instructions:

  1. Arrange the tomato slices on a plate, alternating with mozzarella slices.
  2. Tuck fresh basil leaves between the tomato and mozzarella.
  3. Drizzle with olive oil and balsamic vinegar or glaze.
  4. Season with salt and pepper to taste.
  5. Serve immediately and enjoy!


2. Roasted Tomato Soup

When the weather starts to cool, there’s nothing better than a warm bowl of homemade roasted tomato soup. This recipe is perfect for using up those end-of-season tomatoes and serves as a comforting meal, especially when paired with a grilled cheese sandwich. Roasting tomatoes concentrates their flavors and gives the soup a rich, sweet taste.

Ingredients:

  • 6-8 ripe tomatoes, halved
  • 1 medium onion, quartered
  • 4 garlic cloves, peeled
  • 2 tbsp olive oil
  • 2 cups vegetable broth
  • 1 tsp dried thyme
  • Salt and pepper to taste
  • Fresh basil for garnish

Instructions:

  1. Preheat the oven to 400°F (200°C).
  2. Place the tomatoes, onion, and garlic on a baking sheet. Drizzle with olive oil, season with thyme, salt, and pepper, and toss to coat.
  3. Roast for 25-30 minutes, until tomatoes are softened and caramelized.
  4. Transfer the roasted vegetables to a blender or food processor and add the vegetable broth. Blend until smooth.
  5. Pour the soup into a pot and heat over medium heat. Adjust seasoning as needed.

3. Tomato and Basil Pasta

A quick and flavorful pasta dish that brings together the perfect blend of tomatoes, fresh basil, and garlic. It’s simple to make and a great way to enjoy fresh tomatoes straight from the garden or market. This tomato basil pasta makes for a satisfying meal that’s both light and nutritious.

Ingredients:

  • 8 oz pasta (spaghetti or your choice)
  • 4-5 ripe tomatoes, diced
  • 2 tbsp olive oil
  • 2 garlic cloves, minced
  • A handful of fresh basil, chopped
  • Salt and pepper to taste
  • Parmesan cheese, for serving

Instructions:

  1. Cook the pasta according to the package instructions. Drain, reserving 1/4 cup of pasta water.
  2. In a large skillet, heat olive oil over medium heat. Add garlic and sauté until fragrant, about 1 minute.
  3. Add the diced tomatoes to the skillet and cook for 5-7 minutes, until softened.
  4. Toss the cooked pasta into the skillet with the tomatoes. Add the reserved pasta water if needed to help coat the pasta with the sauce.
  5. Stir in fresh basil, salt, and pepper. Serve with a generous sprinkle of Parmesan cheese.
