Tomato and Cucumber Salad with Feta | Mediterranean Salad

This is one of my summertime favorites as it can be made ahead of time, does not heat up the kitchen, and is full of fresh ingredients.

If I have oregano growing in my garden at the time, I will chop a handful and place it in my salad too.

While you’re making careful to not over-salt the dressing.  Feta cheese is salty and will add to the flavor of the salad.

Cucumber, Tomato, and Feta Salad

This salad is perfect for a summertime snack or meal! Packed with fresh veggies and herbs this nutritious salad is tasty & healthy!

Ingredients

  • 4 cups Coarsely Chopped Cucumbers (I like peeled)

  • 2 Large Tomatoes

  • 1 Bunch of Green Onions Chopped

  • 1 cup of Pitted Kalamata Olives, Halved

  • ½ cup Coarsely Chopped Fresh Mint

  • 6 Tbsp Olive Oil

  • ¼ Fresh Squeezed Lemon Juice

Directions

  • Combine cucumber, green onions, tomatoes, olives, mint and ½ of cheese in bowl.
  • In a separate smaller bowl, whisk together lemon juice and oil until combined. Season lemon mixture with salt and pepper.
  • Pour dressing over salad and sprinkle remaining feta cheese over salad.
  • Chill until ready to serve.
