Mint Lemonade Spritzer

Refreshing mint and tangy lemon juice make this summer mocktail a thirst quencher.

Ingredients

  • 1 cup fresh mint leaves

  • 1 cup freshly squeezed lemon juice (about 4-5 lemons)

  • 1/2 cup honey or agave syrup

  • 4 cups sparkling water

  • Ice cubes

  • Lemon slices and mint sprigs for garnish

Directions

  • In a small saucepan, combine the honey (or agave syrup) with 1 cup of water and bring to a simmer. Stir until the honey is fully dissolved.
  • Remove from heat and add the fresh mint leaves to the syrup. Let it steep for 15-20 minutes, then strain out the mint leaves.
  • In a large pitcher, mix the mint syrup with the freshly squeezed lemon juice.
  • Add the sparkling water to the pitcher and stir gently.
  • Fill glasses with ice cubes and pour the mint lemonade spritzer over the ice.
  • Garnish with lemon slices and mint sprigs before serving.
  • Enjoy!
