Eggs Benedict with Curly Kale Microgreens

Ingredients

  • 4 English muffins, split and toasted

  • 8 slices of Canadian bacon

  • 4 poached eggs

  • 1 cup Curly Kale microgreens

  • Hollandaise sauce (store-bought or homemade)

  • Chopped chives (optional)

Directions

  • Cook the Canadian bacon in a skillet over medium heat until browned.
  • Place a slice of Canadian bacon on each toasted English muffin half.
  • Top with a poached egg.
  • Spoon hollandaise sauce over each egg and sprinkle with chopped chives if desired.
  • Finish with a handful of fresh microgreens for a light, sweet flavor. Serve immediately.
