Broccoli Ice Cream Recipe – That Doesn’t Taste Bad

Looking for new ways to enjoy your kid’s (or even your own!) favorite vegetable? We bet you’ve never had broccoli in ice cream before!

Before you write us off as totally nuts, hear us out–putting broccoli in your ice cream is about the equivalent of putting kale in your morning smoothie, and you’ve been doing that for years. And with delicious ingredients like creamy frozen bananas, sweet Medjool dates, rich cocoa powder, and tart frozen berries, there’s even more to love here than in your favorite green juice. 

Helpful Hints

Peel your bananas before freezing. One of the greatest discoveries of our lives has been that if you peel your frozen bananas before putting them in the freezer, you aren’t stuck with a gushy brown mess come ice cream time (yeah, we know it sounds silly, but you’d be shocked how many people don’t do it!). If you forgot to de-peel before freezing, don’t worry–the outer layer will come right off using a vegetable peeler. 

Check your cocoa. Did you know that the health benefits of cocoa can vary? While there’s nothing wrong with the traditional Hershey brand, we love using Dutch-processed cocoa, a deep, rich variety that’s packed with vitamins and minerals and may even lower blood pressure and inflammation. 

Go berry crazy. Berries are nature’s candy, and the right varietals can make this concoction even more enticing. Our go-to here is a tart cherry, which is bursting with flavor and complemented by the cocoa powder. We’d also reach for a raspberry or strawberry, but stay away from the blueberry, which can affect texture. 

Get creative. This recipe can be made to order. Make it your own by trying out different kinds of nuts (pistachios would be dreamy), varieties of milk, flavors of berries or even trying additional ingredients such as nut butter or dark chocolate chips.

A healthy a tasty everyday dessert alternative for your kids to enjoy – This Broccoli Ice Cream is a fun new way for your kids to eat their vegetables!

Ingredients

  • 1-2 frozen bananas, peel removed

  • 1 cup broccoli, riced or very finely chopped

  • 4 oz. cold milk of choice (dairy, almond, soy, oat)

  • 1 Tbsp. cocoa powder (we like Dutch-process)

  • Handful for almonds or cashews

  • 2-3 pitted Medjool dates

  • One cup frozen berries of choice

Directions

  • Combine all ingredients in a large food processor. Mix, pulsing frequently to ensure that everything is broken down evenly. If the mixture is too thick, add additional milk. If too thin, add an additional half a banana.
  • Serve immediately or transfer to a freezer-safe container and save for up to two weeks.
