Pineapple Jalapeno Boozy Popsicle Recipe

Tequila, pineapple, and jalapeno in a frozen ice pop is the perfect way to relax on a warm summer weekend. It is a wonderful treat and essentially feels like you are enjoying a pineapple margarita on a stick.

The flavor combination of a freshly harvested jalapeno (which is the perfect hot-cold flavor sensation) with juicy pineapple, a little splash of fresh lime juice, and tequila will have all of your friends asking for seconds. This is perfect for poolside chats, cocktails before dinner, or happy hour with colleagues.

Some popsicles with liquor seem challenging to make, but this recipe is actually incredibly easy and so worth the effort. The hardest part is waiting for the 6 plus hours for the treat to freeze.

The Licks & Sticks boozy popsicle can easily transport you to the tropics. The timeless combination of tequila and pineapple is beautifully elevated with the jalapeno simple syrup.

Once you have combined all of the ingredients and taste-tested along the way it is time to pour the liquid into your molds. We really like using silicone molds for lots of reasons. They are really easy to clean and it is super easy to remove the popsicles from the mold when you are ready to serve.

However, if you don’t have molds handy and you are ready to get going with this tasty treat you can use small disposable Dixie cups. Once the mixture is frozen, tear away the cup and enjoy your pop. One thing to remember if you are using cups or ice cube trays is to let the pop freeze for about an hour and then put your popsicle stick in. You can secure the stick using foil if need be.

Making boozy popsicles is a fun way to let your inner mixologist shine. Just think about the flavors you like in a cocktail and with a few ingredient adjustments, you can turn it into a frozen treat. Ingredients

  • 1 sliced jalapeno

  • ½ cup blanco tequila

  • 4 cups fresh pineapple

  • ½ cup lime juice

  • ¼ cup jalapeno simple syrup

  • Pinch of cayenne pepper

  • 6 tablespoons jalapeno tequila

Directions

  • Jalapeno infused Tequila
  • Combine sliced jalapeno and tequila, cover and allow to infuse for at least 4 hours before using.
  • Jalapeno Simple Syrup:
  • Bring 1 cup of sugar and 1 cup of water to a boil, add 2-3 slices of jalapeno and remove from heat. Let this steep for 30 minutes to an hour.
  • Making the Popsicles:
  • In a blender, blend pineapple, lime juice and simple syrup on high until smooth.
  • Stir in jalapeno tequila.
  • Pour into popsicle mold and freeze overnight.
